Cooking:

You will need :

Cooking:

1. Lubricate the baking dish with olive oil. Cut each zucchini in half. Remove the pulp with a spoon. Zucchini too lightly grease with oil and place in a form.

2. Fry onions, peppers, corn in a pan. Remove from heat.

3. Add tomatoes and olives to the filling, salt, mix everything. Put the vegetable mixture in zucchini.

4. Sprinkle with cheese. Bake at 200 ° C for about 15–20 minutes.

6. Shakshuka

You will need:

  • 6 eggs
  • 4 ripe tomatoes
  • 1 onion
  • 1 bell pepper (preferably red)
  • 1 small chili pepper (seeds are best removed)
  • 2 cloves of garlic
  • paprika, turmeric
  • greens to taste
  • olive oil

Cooking:

1. Wash the tomatoes, make cuts, pour boiling water and leave for 10 minutes. Then peel and chop finely.

2. Finely chop the onion and fry in olive oil.

3. Finely chop the bell pepper and send to the onion.

4. After 5 minutes, add chili and garlic, spices. Stew for another 5 minutes, and then add the tomatoes. Continue for about 10 minutes.

5. Use a spoon to make indentations in the sauce and break the eggs into them. Cook until the protein turns white. Remove from heat. Sprinkle with herbs.

7. Toast with avocado and egg

You will need:

  • 3 eggs
  • 1 avocado
  • 3 slices of whole grain bread
  • 2 tomatoes
  • olive oil

Cooking:

1. Mash the avocado in mashed potatoes and spread it on the toasted bread.

2. Wash the tomatoes and cut into thin rings. Put on top of the sandwich.

3. Pour a little olive oil into a hot pan and fry the eggs. Let them cool slightly and lay on top of the tomatoes.

8. Quiche with spinach and cheddar cheese

You will need:

  • 1/2 cup spinach (fresh or frozen)
  • 1 egg
  • 1/3 cup milk
  • 1/3 cup grated cheddar cheese
  • 1 slice of bacon
  • salt and pepper to taste

Cooking:

1. To prevent the pie from becoming too watery, it is advisable to remove excess fluid from the spinach first. If using frozen spinach, put it in a colander, pour over warm water and then squeeze. If your greens are fresh, put it in a mug, add a couple of tablespoons of water, cover with a paper towel and put in the microwave for 1 minute. Then drain the liquid from the mug and squeeze the leaves with a spoon.

2. Add the egg, grated cheddar, milk, salt and pepper to the spinach in the mug. Add a slice of bacon if you want.

3. Beat everything with a fork, cover with a paper towel and microwave for 3 minutes (or until tender).
